Current State Status: A person in charge must be able to demonstrate knowledge of food safety principals as outlined in the FDA Food Code. Being a Certified Professional Food Manager is one way to demonstrate knowledge. Person in charge must be present during hours of operation.

Summary of Code Requirements: Retail establishments must have a person in charge during hours of operation who has demonstrated knowledge of food safety principals outlined in 2001 FDA Food Code.
